Carrot Cake Cookie
Inspired by Sunshine Tree Terrace, EPCOT
Two soft spiced carrot-cake cookies sandwiched around a thick layer of cream cheese frosting. The one that keeps going viral for a reason.
Ingredients
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup grated carrot
- 2 eggs
- 2 1/2 cups flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 cup chopped walnuts
- 1 cup raisins
- Cream cheese frosting, for filling
Method
- Cream the butter and brown sugar together, then mix in the grated carrot and eggs.
- Combine the flour, baking soda, and cinnamon, then fold into the wet mixture along with the walnuts and raisins.
- Scoop large mounds onto a baking sheet and bake at 350°F for 12-14 minutes.
- Let cool completely, then sandwich two cookies together with a thick layer of cream cheese frosting.
