Mickey-shaped Churro Waffles

Inspired by Spyglass Grill, Disney's Caribbean Beach Resort

A churro that gave up and became breakfast. Spyglass Grill serves these with bacon and sausage, which sounds like too much until you've had it. The trick is coating them the second they come off the iron.

Ingredients

  • 1 3/4 cups flour
  • 1/4 cup cornstarch
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 3/4 cups milk
  • 6 tbsp melted butter, plus 4 tbsp more for brushing
  • 2 tsp vanilla extract
  • 3/4 cup sugar and 2 tbsp ground cinnamon, stirred together in a shallow dish

Method

  1. Whisk the flour, cornstarch, sugar, baking powder, cinnamon, and salt together. The cornstarch is what keeps the outside crisp enough to hold a coating.
  2. Whisk in the eggs, milk, the 6 tbsp melted butter, and vanilla until just combined — lumps are fine, overmixing makes them tough.
  3. Rest the batter 5 minutes while the waffle iron heats (a Mickey-shaped iron if you have one).
  4. Cook until deep golden and crisp at the edges. Go a shade darker than you would for plain waffles; the sugar coating softens them slightly.
  5. Brush both sides with melted butter while the waffle is still hot, then press straight into the cinnamon sugar and turn to coat.
  6. Serve immediately, and don't stack them — trapped steam undoes the crisp in about a minute. Bacon and sausage on the side if you're doing it properly.
