Mickey Pretzel
Inspired by Parkwide, Walt Disney World
A classic soft pretzel shaped into Mickey's head and ears before its baking-soda bath, so the shape holds through the bake.
Ingredients
- 1 1/2 cups warm water
- 1 packet active dry yeast
- 1 tbsp sugar
- 4 cups flour
- 2 tsp salt
- 2 tbsp melted butter
- 10 cups water, for boiling
- 2/3 cup baking soda, for boiling
- Coarse pretzel salt
- 1 egg, beaten, for egg wash
Method
- Dissolve the yeast and sugar in warm water and let sit 5 minutes until foamy.
- Mix in the flour, salt, and melted butter, and knead until smooth. Let rise 1 hour.
- Divide the dough into 8 pieces. Roll each into a long rope and shape into Mickey's head and ears — one large circle, two small circles.
- Bring the water and baking soda to a boil. Boil each pretzel for 30 seconds per side.
- Brush with egg wash, sprinkle with pretzel salt, and bake at 450°F for 12-15 minutes until deep golden brown.
