The adults-only finale from Palo, served with both vanilla and chocolate sauces. The one dessert every DCL veteran tells you not to skip.

Ingredients

  • 6 oz dark chocolate, chopped
  • 4 tbsp butter, plus more for the ramekins
  • 3 egg yolks
  • 4 egg whites
  • 1/4 cup sugar, plus more for the ramekins
  • 1 tbsp flour
  • Vanilla ice cream or crème anglaise, for serving

Method

  1. Butter four ramekins and coat with sugar. Preheat the oven to 400°F.
  2. Melt the chocolate and butter together, then whisk in the yolks and flour.
  3. Whip the egg whites with the sugar to glossy medium peaks.
  4. Fold the whites into the chocolate base in thirds, keeping as much air as possible.
  5. Fill the ramekins and bake 12-14 minutes until risen with a soft center.
  6. Serve immediately, split open, with a pour of cream or a scoop of vanilla.
